​田园时光美食--南瓜豆沙包

中筋面粉 一杯240毫升 约150克(All purpose flour 1cup)

妈咪瓜 100克(Buttercup 100g)

豆沙120克 (Bean paste 120 g)

干酵母1/2茶匙(Dry yeast 1/2 teaspoon)

白糖 1/4茶匙(Sugar 1/4 teaspoon)

不烫手温水 2汤匙(Warm water 2 tablespoons  )

1、先把酵母激活  看到浮沫即可

2、准备妈咪瓜buttercup (kabocha) 

3、蒸熟或煮熟

4、压成泥 当它的温度不烫手时 放入酵母水混合。

5、再倒入面粉 搅成雪花状 直到看不到南瓜泥  然后揉成团 如果粘手可以再加面粉  直到面团成型 略微偏硬 不粘手为止。

6、覆盖 静置40分钟到一个小时 让它发酵至2倍大 或你可以看到明显的蜂窝状组织即可。

7、把发好的面团再揉回原来的体积 排出所有的空气  搓成长条 分成6份。

8、把豆沙馅也分成6份  注意豆沙馅最好是常温 。

9、包馅料之前把每个小面团 再用力揉至光滑  然后像视频显示的一样包入馅料  记得包子皮中间部分要厚一些,包的时候紧贴馅料 中间尽量不留空气  。

10、放入大号的蒸笼 记得包子底下要垫上小张的烘培纸。  静置20-30分钟。

11、锅里放冷水  放上蒸笼 用中偏高火蒸 水开了以后 蒸12分钟。中间不要开盖 直到蒸好后15分钟再打开。

Steamed bean paste buns are one of the most common desserts in Northern China. Today my mom will be sharing this golden pumpkin version that is perfect for the fall.

 

First, we will activate the yeast until it is frothy.

Then we will prepare the buttercup pumpkin

steam or boil until it's fully cooked

Mash the pumpkin and let it cool to room temperature before mixing in the yeast water

Mix in the flour and stir until it is paste like and you can no longer see the mashed pumpkin. knead into a dough form, sprinkle on extra flour to prevent your hands from sticking. Keep kneading until you have a smooth ball, soft to the touch without being sticky 

Cover the dough with a lid and let it sit for 40 minutes to an hour until it has doubled in size, you will see honey comb like structure on the inside 

Knead the dough back into its original size until all the air bubbles are squeezed out, roll into a long row and divide into 6 pieces. 

divide the bean paste into 6 portions as well, it should preferable be at room temperature. 

Knead each dough piece until it is smooth and roll it out as shown and wrap in the bean paste filling. Remember to keep the base of the bun thicker and to wrap closely around the filling so that you're not wrapping in too much air. 

Prepare a large steamer and line with pieces of baking paper and place the buns in. let them sit for 20-30mins.

Place the steamer in a pot of cold water  and steam on medium high heat . once the water comes to a boil, steam for 12 minutes . make sure you don't open the lid during the steaming process. After the time is up, let it sit another 15 minutes before you open the lid.
