田园时光美食  海鲜土豆煎饼

Seafood potato pancakes

去皮土豆 600克(Peeled potatoes 600 g)

半个洋葱(Half the onion)

2-3根葱(2-3 green onions)

盐1/2茶匙(Salt 1/2 teaspoon)

黑胡椒粉 1/2茶匙(Black pepper 1/2 tsp)

大只虾仁 6-7只(6-7 large peeled shrimp)

鱼籽 2汤匙(2 tablespoons caviar)

生粉或菱粉 100克(Potato or tapioca starch 100 g)

粘米粉 100克( Rice flour 100 g)

欢迎来到田园时光美食  今天要分享的是一道很特别的煎饼 它是韩式土豆饼和中式海鲜煎饼的结合 非常好吃。

 

1、先要准备去皮的土豆约600克,放到食品加工机里(Food Processer)  ,同时再往里面加入洋葱、葱、盐、黑胡椒粉 以及 虾仁  一起打成泥。

 

2、之后再拌入鱼籽 这个可以给煎饼带来鲜味。另外再加入粘米粉和土豆淀粉(或菱粉Tapioca)  这里不同土豆和粉的吸水性可能不同,建议先加土豆淀粉,然后慢慢的加入粘米粉, 加到视频显示的浓稠状态,如果太稠了 你可以减少粘米粉的量。

 

3、现在把不粘锅烧热 放入适量的油,再像视频显示的那样把土豆粉浆 舀入锅内 摊平 这时可以先关火  摊平之后再开中偏高火 开始煎。翻面的时候可以在面上先摸一些油再翻,同时动作要快一些 或像我一样颠锅翻面。煎到熟透 两面酥脆即可。

 

4、 我这里做的土豆饼大约是3-4个人的份量,你可以按比例酌情减少。

5、这个饼子趁热吃 它的表面是酥脆的感觉,里面有虾仁和鱼籽的鲜甜味  还有土豆的香味和脆感  。很好吃。另外如果凉了 可以再煎热一下表面又可以恢复酥脆感。

Today we will be making a unique style of pancake, combining Korean potato pancakes with the Chinese seafood pancakes. 

 

Firstly, peel the potatoes, I have about 600 grams here. place it in a food processor along with the onion, green onions, salt, pepper and shrimp, then blend into a thick paste

 

Add in the caviar, this is the secret ingredient that will makes this pancake incredibly flavourful.

 

Add in the glutinous rice flour and potato starch, or tapioca powder. because different potatoes have different levels of moisture content, add in the potato starch first then slowly mix in the glutinous rice flour, once you've reached the consistency as shown it's ready, cut back on the glutinous rice flour if it's starting to become too thick 

 

Heat a non stick pan until its' hot and add in some oil, pour the paste in as shown and smooth it out immediately. you can turn the heat off at this step after turn it back on to medium high once it's completely smooth. start panfrying until one side is golden and crispy. then brush a layer of oil to the top side before flipping. the trick to flipping it is doing it in one quick swift motion. once both sides are crispy it's ready

 

I made enough pancakes for 3-4 people, adjust the portion to your own liking

 

Enjoy this pancake while it's hot. it's crispy on the outside and chewy on the inside. the shrimp and caviar gives it a delicious seafood flavour. if the pancake has cooled you can reheat it by panfrying it again and it will be equally yummy!
