田园时光美食  煎萝卜糕(免蒸)radish cake

白萝卜丝200克(Shredded white radish 200 g)

虾干碎 1汤匙(1 tbsp chopped dried shrimp)

香菇碎1.5汤匙(1.5 tbsp chopped shiitake mushrooms)

葱花1/2杯(1/2 cup chopped green onion)

紫菜干 5克(5 g of dry nori)

鱼露1茶匙(1 tsp fish sauce)

蚝油1/2茶匙(1/2 tsp oyster sauce)

白胡椒粉1/2茶匙(1/2 tsp white pepper)

糖1/2茶匙(1/2 tsp sugar)

粘米粉1/2杯(1/2 cup rice flour)

澄粉 1/4杯(1/4 cup wheat starch)

清鸡汤 适量(Chicken broth)

1杯(1cup)=250ml

1汤匙( 1 tbsp)= 15ml

1茶匙(tsp)= 5ml

今天给大家做一道萝卜糕,我在这里我省去了蒸的步骤,直接煎,简单了许多也非常的好吃。

1、首先我们要准备好各种材料: 把白萝卜 擦成细丝。-- 把泡好的虾干 切碎。--把 香菇泡好后,切碎。---把干紫菜  泡软 然后切碎。---葱切成葱花。

---把粘米粉和澄粉 混合拌匀。

 

2、在锅里放入适量的油,先把香菇碎和虾干碎用中火炒香,再放入葱花一起炒香。

 

3、接着把萝卜丝和紫菜碎放入稍微翻炒片刻,然后放入屏幕显示的调味料 同样用中火炒匀,不要用大火以免把汤汁烧干。

 

4、之后马上关火,倒入混合好的粘米粉和澄粉,借着锅里材料中的汤汁和热度 把粉拌成团,如果比较稠,可以分几次一点点加入鸡汤或其他高汤,直到粉全部拌成团。面团可以软一些 煎出来的萝卜糕口感会比较好。

 

5、把面团放到碗里 稍微放凉一下,直到你的手可以放入操作。

 

6、把面团做成若干个圆饼,这时可能会比较粘手 最好戴上手套 或在手上抹油。

 

7、煎锅里放适量的油,把做好的饼子放入,用中偏高火煎至两面金黄 熟透即可。你可以直接吃也可以沾着你自己喜欢的酱汁吃。

Today we will be making radish cake. But this version is much more simpler than the traditional recipe which requires steaming. Instead we will be panfrying directly. and the best part, it's equally delicious

 

First we will prepare all the ingredients and set them out. shreds the white radish, cut up the soaked dried prawn. cut up the soaked dried shiitake mushrooms, cut up the soaked dry nori. and finally cut up the green onions as well. mix together the rice flour and wheat starch until well incorporated

 

Add in the pan some oil and sauté the mushroom and dry prawn on medium heat until fragrant. and add in the green onions

 

Add in the white radish and dried nori and stir for a bit. season with the seasonings shown on the screen on cook on medium heat. careful not to use high heat to prevent the ingredients from losing the moisture

 

Turn off the heat and add in the rice flour and wheat starch mixture. taking advantage of the heat from the pan, mix together the ingredients with the flours until its well incorporated. if it's too thick, you can add in little bit of chicken stock or other stock a little bit at a time. until everything is fully combined.  It's recommended to keep the dough on the softer end to result in the best texture

 

Place the flour dough in a bowl and let it cool until you can manipulate it with your hands 

 

Roll the dough out into several round pancake forms. they will be sticky, so it's best to wear some food grade gloves or rub some oil on your hands 

 

Place some oil on a pan and place in the radish cakes. panfry on medium high heat until both sides are golden and fully cooked through. you can eat it as is, but it's extra delicious when you dip it in your favourite sauce.
