stirred pork loin

今天和大家分享一道非常美味的家常菜 炒猪里脊片。

1、首先把猪里脊肉 切成片状,不需要太薄。

2、把里脊片放在碗里,先用盐和白胡椒粉抓匀,再加些油拌匀,最后用生粉裹好备用。

3、同时把水发的香菇去蒂、罐头冬笋和胡萝卜都切成片

4、煎锅烧热 放入半杯的油,油温烧至170摄氏度以上,或用筷子测试,有大量气泡出现即可。把猪肉片平铺的放入,用大火煎,至两面外皮微微酥脆,不要煎太过。取出备用。

5、炒锅放少量的油,先把姜片炒香,再放入胡萝卜片炒软,如果你喜欢吃辣 可以放一些新鲜的辣椒一起炒。

6、接着放入香菇和冬笋翻炒,用中火稍微多炒一点时间,去掉香菇和冬笋的水气。再放入葱段。

7、这时 把料酒趁热浇入,它会让这些食材变得很香。接着放入屏幕显示的其他调味料,

8、炒匀后放入煎过的猪里脊片用大火炒,加一些鸡汤既能让味道融合,锅里的食材也不会太干。

9、出锅前加一点点的香醋即可

Today we will be making a simple everyday dinner, a delicious stirred pork loin 

First slice the pork loin into slices, not too thin 

Season with salt, white pepper and some oil, then coat in corn starch

remove the stem of some soaked shiitake mushrooms and cut up some canned bamboo and carrots into slices

Heat a pot until hot and add in half a cup of oil, wait until it's 170 degree celsius. do the chopstick test to see if it's ready. insert the chopstick in and if you see lots of bubbles forming then it's ready.  Carefully add each pork slices in flatly and let it fry until golden on both sides

Add a little bit of oil in a pan and sauté some ginger slices until fragrant, add in the carrot slices and stir until it turns soft. if you like spicy food add in some fresh pepper here

Add in the mushrooms and bamboo, stir fry on medium heat until the moisture is all drawn out. then add in some green onions. 

while everything is nice and heated, add in the cooking wine and it will immediately bring out a fantastic mixture of flavour. 

After everything is evenly cooked, add in the pork slices and cook on high heat. add in a bit of chicken stock to allow all the flavours to mingle and keep everything nice and moist. add just the tiniest bit of vinegar at the end and it's ready. 

猪里脊肉250克(Pork loin 250 g)

水发冬菇100克Shiitake mushrooms (soaked) 100 g

罐头冬笋180克(Canned bamboo shoots 180 g)

胡萝卜50克(Carrots 50 g)

红辣椒1个(1 red pepper)

生姜片15克(15 g ginger slices)

 

盐 1/4茶匙(1/4 tsp salt)

白胡椒粉1/2茶匙(1/2 tsp white pepper)

油 1茶匙(1 tsp oil)

生粉1.5汤匙(1.5 tbsp cornstarch)

 

料酒 3汤匙(3 tbsp cooking wine)

酱油 1.5汤匙(1.5 tbsp soy sauce)

糖1/2汤匙(1/2 tbsp sugar)

盐1/4茶匙(1/4 tsp salt)

鸡汤1/2杯(1/2 cup chicken broth)

香醋 1茶匙(1 tsp balsamic vinegar)
