                           福州锅边

(Fuchow Rice Flour Cake Soup‏ )Guo Bien 

 

粘米粉1/2杯(1/2 cup white rice flour)
面粉2汤匙(2 tbsp all purpose flour)
盐1/4茶匙(1/4 teaspoon salt)
熟鱼干20克(Dried fish 20 g)
水发黑木耳40克(Soaked black wood ear 40 g)
葱花10克(10 g chopped green onion)
鸡汤1杯(1 cup chicken broth)
鱼露1汤匙(1 tbsp fish sauce)


 

 

锅边,是福建的福州特有的街头早点。因为非常鲜美所以深受人们的喜爱。正宗的做法需要大的炉和大铁锅,将预先备好的浓米浆均匀浇铁锅内缘四周,烘干后铲入汤中。今天我给大家展示在自家厨房也可以做的锅边。
 
1、我认为最好吃的锅边应该是用这种福州特有的熟鱼干(在北美你可能会在福建人开的超市里见到)或者你可以用虾皮或各种海鲜代替。
2、把熟鱼干的鱼肉取出,放到水里泡软。
3、把水发黑木耳切细丝。切葱花。
4、把屏幕显示的材料--粘米粉1/2杯(1/2 cup white rice flour)面粉2汤匙(2 tbsp all purpose flour)盐1/4茶匙(1/4 teaspoon salt)混合制成米浆。
5、不粘煎锅烧热,用厨房纸擦少量的油。倒入适量米浆摇晃煎锅,用小火摊成薄薄的面皮,不要太在意形状。面皮成型后取出放置一旁备用。
6、另取一个锅或汤锅,加少量的油,把鱼肉、黑木耳、葱花炒香。你可以加1杯的鸡汤来提味。然后再倒入2杯的水,加鱼露1汤匙调味。
7、烧开后,你可以尝一下汤的味道,一定非常鲜美。这时你就可以把面皮全部放入,再煮开就可以了。注意不要煮太久。

 

Guo bien is a Fujianese traditional speciality that can be found in all breakfast diners. It's direct translation is the sides of a wok because it is made by heating a thick rice mixture on the sides of a wok until it becomes a thin rice chip and then made into a soup. the traditional recipe calls for a gigantic wok and stove, but today I will show you how to replicate this delicacy at home. A side note before I begin, I personally thing this dish is most authentic when made with the fujianese dried fish bits which you can find in a any Fujianese grocery in north america, but you can substitute with dry prawn or seafood.

 

let's get started

 

First soak whichever dried meat you are using in water until soft, I'm using dried fish here

Dice some already soaked black wood ears into thin slices, repeat the same step with some green onions

Make the rice mixture by combining the ingredients show on the screen粘米粉1/2杯(1/2 cup white rice flour)面粉2汤匙(2 tbsp all purpose flour)盐1/4茶匙(1/4 teaspoon salt)

Heat a non stick pan and brush on lightly some oil. give the rice mixture one more stir and then slowly pour into the pan until a thin layer forms. the shape is not really important. set the rice creps aside for later use. 

Use another wok or pot and add in a small amount of oil and stir fry the dried meat, wood ear and green onion until fragrant. you can add in 1 cup of chicken stock for flavour, then dilute with 2 cups of water and season with some fish sauce 1tbsp


Once your soup has come to a boil add in the rice crepe pieces. when it boils again it's done. make sure not to cook for too long. 

 

And we are done!

 

The most authentic way of enjoying this soup is with the fried dough fritters, the oyster cake as well as the fuzhounese triangle cake. I will link all those recipes down below.
