贝果 Bagles
面粉2.5杯约400克(All Purpose Flour2.5cupabout 400g)
糖1茶匙(1 teaspoon sugar)
干酵母粉1茶匙(1 tsp dry yeast powder)
水250毫升(Water 250 ml)
黄油3汤匙(3 tbsp melted butter)
盐1/2茶匙(1/2 tsp salt)
黑芝麻2汤匙(2 tbsp black sesame seeds)
1000毫升水(1000 ml of water)
3汤匙白糖(3 tbsp sugar)
1汤匙玉米糖浆或蜂蜜(1 tbsp corn syrup orhoney)
今天我来做贝果,贝果的面团相对硬一点,揉面是比较辛苦,所以建议最好用台式搅拌机(Mixer)
1、用台式搅拌机的盆,加入
屏幕显示面粉等的材料--面粉1杯约160克(All Purpose Flour 1 cupabout 160g)糖1茶匙(1 teaspoon sugar)干酵母粉1茶匙(1 tsp dry yeast powder)水250毫升(Water 250 ml)。
2、拌匀成面糊后,静置20-30分钟,让其发酵。
3、直到面糊出现很多气泡 且非常松软,说明发酵好了。
4、加入屏幕显示的面粉1.5杯约240克(All Purpose Flour1.5cupabout 240g)黄油3汤匙(3 tbsp melted butter)盐1/2茶匙(1/2 tsp salt)。
5、把盆装到Mixer机器里,开第3档。
6、加2 tbsp black sesame seeds 也可以加亚麻籽、蓝莓干等等
7、搅拌至少5分钟,直到面团非常有筋性。
8、成型的面团要比普通包子的面团更硬一些。
9、这时的面团,应该很有弹性,不粘手。
10、面团搓成长条再分成8份。然后按照视频显示的方法 做成贝果圈胚子。
11、盖上纱布,饧30分钟。直到贝果圈变得饱满。
12、按照屏幕显示的量在汤锅里放入1000毫升水(1000 ml of water)3汤匙白糖(3 tbsp sugar)1汤匙玉米糖浆或蜂蜜(1 tbsp corn syrup orhoney)。
13、烧开后放入 贝果胚子煮1分钟,中间翻一面。
14、烤盘抹油,摆上煮过的贝果胚子。
15、如果你喜欢可以在贝果面上撒一些麦片或芝麻。
16、烤箱预热350华氏度,烤20-25分钟。直到贝果表面金黄即可。
Today we will be making bagels. The key to bagels is the dough consistency, which is much tougher than most pastries, therefore it is recommended to use a electric mixer instead of kneading by hand.
First add in all the dry ingredients shown on screen--面粉1杯约160克(All Purpose Flour 1 cupabout 160g)糖1茶匙(1 teaspoon sugar)干酵母粉1茶匙(1 tsp dry yeast powder)水250毫升(Water 250 ml) into the mixer bowl
once you've reached a soft dough mixture, let it sit for 20-30 minutes to rise
at this point, the dough should be very fluffy and light with many bubbles

Turn the mixer on to the third setting and mix
Add in 2 tbsp of black sesame seeds, or any other dried oats, berries of your choice
mix for at least 5 minutes, until the dough has reached a bouncy consistency
the finished dough should be slightly harder than the dough used for baozi
as well the dough should be bouncy to the touch and not sticky at all
now roll the dough into a long log and divide into 8 pieces and form into bagel shapes as shown
Cover with a cheese cloth and let it sit for 30 minutes until the bagel rings have fully rised
Add--1000毫升水(1000 ml of water)3汤匙白糖(3 tbsp sugar)1汤匙玉米糖浆或蜂蜜(1 tbsp corn syrup orhoney) to a pot as shown
once it has come to a boil, cook the bagels for one minute, flipping it halfway through
Oil a baking pan and place on the bagels,
free feel to sprinkle on some oats or sesame seeds
Remember to have the oven preheated at 350 degree farenheight and bake for 20-25 minutes until the surface is golden
