田园时光美食  茄汁罗非鱼

罗非鱼 500-550克(Tilapia 500-550 g)

姜末 1茶匙(Minced ginger 1tsp )

蒜末1汤匙(Minced garlic 1 tbsp)

葱花1/2杯(Chopped green onion 1/2 cup)

猪肉末80克(Minced pork 80 g)

番茄沙司 5汤匙(Ketchup 5 tbsp)

水 250毫升(Water 250 ml)

白胡椒粉1茶匙(White pepper powder 1 tsp)

糖1汤匙(Sugar 1 tbsp)

酱油1茶匙(Soy sauce 1 tsp)

盐1/2茶匙(Salt 1/2 tsp)

料酒 1茶匙(Cooking wine 1 tsp)

今天要和大家分享一道家常鱼的做法 ,茄汁罗非鱼。

1、首先要把鱼肚子里的内脏和黑色的膜清除和清洗干净 ,这样可以减少鱼腥味。

2、然后在鱼身上划几刀。再把鱼放入500毫升的水里 加入1汤匙的盐 浸泡30分钟 ,为了是进一步去腥。

3、接着把鱼身上的水份擦干,再用生粉把鱼的两面抹过一遍 这样煎的时候不易破皮。

4、现在把锅烧热 多放一些油,当油热起来的时候,把鱼放入,用大火煎,刚开始不要翻动鱼,并且像视频显示的这样不时地把锅倾斜一些,让鱼肉鱼尾部分都均匀受热煎酥。

5、3-5分钟 后 底部的一面就开始出现微焦,这时再翻面 就不会破皮了。用同样的方法把鱼煎熟煎酥。注意中间当鱼的两面都出现微焦时 可以把火力调低一些 以免煎糊。

6、现在来做茄汁,把炒锅烧热 放少量的油,把姜末和蒜末炒香,之后加入肉末炒至发白,然后加入一点点料酒去腥。

7、接着马上把屏幕显示的调味料和水放入, 烧开,并煮至稍微的浓稠,把煎好的鱼放入,再加些葱花,把鱼和茄汁混匀 即可出锅。

8、这道菜要趁热吃,它酸甜可口,鱼皮微脆,鱼肉鲜嫩,非常的好吃。

Today we will be making a delicious tomato tilapia fish dish.

First remove the fish guts and wash the inside of the fish clean. make sure you remove the black membrane inside to reduce the fishy smell

Slit a few cuts on the sides of the fish. and place the fish in 500ml of water, add in 1 tablespoon of salt. soak for 30 minutes to further remove the fishy smell

Now dab off the moisture on the fish, and coat both sides with corn starch. this will keep the fish skin fully intacted

Heat a pan until it's hot, add in a good amount of oil, and once the oil heats up, Add in the fish on panfry on high. don't touch it too much and tilt the pan as shown to allow the fish to cook evenly

After 3-5 minutes, the fish will start to brown and crisp up. now it's time to flip the fish over. panfry the other side with the same technique as before. once both sides fo the fish are golden and crispy. turn the heat down to low to prevent burning the fish until the fish is fully cooked

Now we will make the tomato sauce. heat a pan until it's hot and add a small amount of oil. sauté some minced ginger and garlic. stir in some minced meat until they turn white  and add in a little bit of cooking wine for flavour

Season wth the ingredients shown and dilute with some water. heat to a boil and Once the sauce has thickened, add in the pan fried fish and sprinkle on some scallion. fully combine the sauce with the fish and it's ready.

 

This dish taste best while it's hot. it's sweet and sour. the fish is crispy on the outside and tender on the inside
