田园时光美食--芝麻葱油饼

Crispy Sesame Scallion Crepe

中筋面粉1杯约150g(All purpose flour 1 cup)

水1/2杯 约120ml (Water 1/2 cups about 120ml)

白芝麻3汤匙 (White sesame  3 tablespoons)

椰子油(猪油或黄油)1汤匙(Coconut oil or lard or butter 1 tablespoon)

葱花1/2杯(Chopped green onions 1/2 cup)

盐1/4茶匙(Salt 1/4 teaspoon)

五香粉1/4茶匙(Five spiced powder 1/4 teaspoon)

  1. 首先 需要1杯面粉,  1/2杯水,把水加热到大约70摄氏度左右(没有温度计 可以观察锅里出现很小气泡即可),把热水和面粉混合。揉成团,用一块厨房毛巾覆盖 让面团静置15-20分钟。

  2. 同时 把烤熟的芝麻放到石臼里 磨碎,让芝麻的香气散发出来。

  3. 再准备葱花,葱花尽量切的细一些。

  4. 15分钟过后回到面团这里,在板上撒粉,把面团揉至光滑,之后 擀开  擀成24cm × 24cm 的面皮。

  5. 在面皮上抹油 我用椰子油 可以用猪油、黄油,薄薄的抹一层。

  6. 接着 撒盐、五香粉(或者黑胡椒粉)、磨好的芝麻、葱花。然后卷起来。

  7. 分成6份。把每一份小面卷开口的地方封住(像视频展示的一样),再压平 擀成很薄的圆饼,记得撒一些粉 尽量擀薄 煎出来才好吃。

  8. 准备煎锅 开中火,往锅里放油,稍微多放一些。开始煎饼,记得勤翻动,让它受热均匀。煎至表面微黄酥脆 即可出锅 用厨房纸吸干煎饼表面的油。如果你喜欢很脆的口感 可以多煎一会。

 

 

 

Last weekend, I went to visit my parents in Windsor. My mom made the most delicious crispy sesame scallion crepe. and today she will be sharing the recipe with you 

 

First, you will need 1 cup of flour. heat up 1/2 cup of water until it's around 70 degrees C. If you don't have a thermometer, just wait until you see little bubbles appearing in the water. Pour the luke warm water into the flour and knead into a dough. cover with a kitchen towel and let it sit for 15-20 minutes 

Now place some toasted sesame seeds into a motor & pestle and grind. By crushing the sesame seeds, you're helping it release the maximum amount of flavour

Prepare the scallion, chop them into thin pieces 

Once the 15 minutes has passed, sprinkle on some flour on a board and Knead the dough again until smooth. roll it out into a square that is 24 by 24 cm. 

Brush on a thin layer of oil. I'm using coconut oil here, but you can use lard, or even butter

Now sprinkle on the salt, five spice or black pepper. the sesame seeds from earlier and the scallion. roll it up as shown

Divide into 6 pieces, make sure you seal the opening as shown, roll them out into thin round crepes. remember to sprinkle on some flour to prevent sticking.  the thinner you roll them out, the crispier they will be

Prepare a frying pan. turn it on medium and add in the oil, be generous with the oil. when you pan fry them, be sure to turn them frequently to allow both sides to heat evenly.  Pan fry until both sides are crispy and golden and it's ready! use some kitchen towel to soak up the excess oil. if you like your crepes extra crispy, leave them in the frying pan for a bit longer.
