Cheese Crepe

饼皮材料(Dough ingredients):

中筋面粉 100克(All purposes flour 100 grams)

菱粉或生粉 30克(Tapioca or potato starch 30 g)

盐 1/4茶匙(Salt 1/4 teaspoon)

水100毫升(Water 100 ml)

 

油面材料(Oil Flour Ingredients):

中筋面粉 15克(All purpose flour 15 g)

猪油25克(Lard 25 grams)

 

馅料(Filling):

鸡蛋2个(2 eggs)

盐1/4茶匙(Salt 1/4 teaspoon)

马苏里拉奶酪 80克(Mozzarella cheese 80 grams) 

 

 

欢迎来到田园时光美食  今天要分享的是台湾人气早点 Cheese crepe。

1、首先 把屏幕显示的材料混合成面团,这个面团应该稍微软一些。然后加盖静置30分钟以上。

2、现在我们做油面,把屏幕显示的面粉和猪油混合成糊状, 一边备用。你可以用菜油代替猪油。

3、30分钟以后 我们回到面团这里,在板上撒一下薄粉 把面团放在上面 揉至光滑。 然后分成2份。

4、再把分好的面团揉圆,擀成薄的圆饼,然后在饼子上均匀地抹上之前准备好的油面。

5、 在圆饼中心位置向外切一刀 从开口处把面皮卷起成塔状。 再擀平,擀成长方形 擀得薄一些口感会更好。

6、在下锅煎之前 先要准备好 马苏里拉或切达起司(Mozzarella or cheddar cheese )以及2个打散的鸡蛋 鸡蛋在鸡蛋里加一点点盐。

7、准备大号的不粘锅,先刷一些油 再把锅烧热,把饼皮放入 用中偏高火把饼的一面煎到微酥,然后在饼子朝上一面再刷一点油后翻面煎。

8、这时边煎边把起司片cheese 码放到饼皮上,同时再起一个锅 把鸡蛋液的一半煎熟后 也放在起司cheese上,然后像视频显示的一样 把饼皮折起来。

9、在锅里再煎一会直到饼皮起酥 起司cheese融化即可。 用同样的方法把另一个饼子也煎完。


 

这个蛋饼是中西结合的味道 外皮松软又层层起酥 非常好吃 喜欢起司味道的 可以多加些。

Today we will be making a Taiwanese popular breakfast, a delicious savory cheese crepe

 

First mix together the ingredients on the screen into a dough, it should be on the softer side, let it sit for 30 minutes with the lid on

We will make an oil dough by combining the flour with some lard until it's a thick paste, set it aside for later. you can sub out the lard with vegetable oil

After the dough has been sitting for 30 minutes, transfer it onto a board that has been floured. knead until it's smooth and divide into 2 portions 

Knead each portion into a round ball and roll it out into a flat circle, evenly spread on the oil dough from earlier

Make a slit in the flat dough as shown and roll it up into a tower, roll it flat again into a rectangle, this will allow give it a crispy texture

Before we panfry them, prepare the cheese. either mozzarella or cheddar would work. also beat 2 eggs and season with a tiny bit of salt

Set out a large non stick pan and brush on some oil, wait until it's heated then panfry the crepes on medium high heat until it's crispy.  brush some oil on the other side and flip it over

Place the cheese on top. in a separate pan, cook the egg mixture into a light omelette and Place it on top. fold the crepe as shown

Let it sit until the cheese has fully melted. 

 

This is a innovative dish combining both western and eastern style of cuisine. the crispy layers is delicious along with the gooey hot cheese.
