生菜牛肉粒stir fried beef
牛眼肉(里脊)300克(Beef tenderloin 300g)
洋葱丁 1杯(1 cup diced onion)
青灯笼椒丁1杯(1 cup diced bell pepper)
细粉丝 40克(Vermicelli 40g)
蚝油 1汤匙(1 tbsp oyster sauce)
料酒1汤匙(1 tbsp cooking wine)
酱油1汤匙(1 tbsp soy sauce)
盐1/2茶匙(1/2 tsp salt)
糖1/2茶匙(1/2 tsp sugar)
黑胡椒粉1/2茶匙(1/2 tsp black pepper)
小苏打粉 1/4茶匙(1/4 teaspoon baking soda)
生粉1茶匙(1tsp cornstarch)
油1汤匙(1 tbsp oil)
李锦记黑椒酱1.5汤匙(1.5 tbsp Lee Kum Kee Black Pepper Sauce)
1、首先把牛里脊300克 Beef tenderloin 300g 切成丁(指甲盖大小)
2、然后用清水浸泡30分钟,清洗干净沥干。
3、放到碗里屏幕显示的调味料放入,用手抓匀,让牛肉粒充分吸收调味料之后,再放入 1汤匙生粉抓匀,最后在倒入1汤匙油拌匀。腌制20分钟。这个过程会让牛肉粒入味且保持嫩滑的口感。
4、下面准备配料:
准备切丁的洋葱和切丁的灯笼椒各一杯( 1 cup diced onion)(1 cup diced bell pepper) 。
另外,把 细粉丝 40克(Vermicelli 40g) 剪成碎短条(像视频显示的) 可以把粉丝放到一个朔料袋子里来剪,以免四处飞溅。
5、现在来炸粉丝,锅里放1/2杯或更多的油,用大火把油热 至看不见锅里的油流动,油一定要烧热,否则粉丝炸不松。可以先放几根粉丝下去试一试,如果看到迅速膨胀起来,说明油温够了。把粉丝分几次放入油锅里炸,炸至蓬松发白,即可捞出,用厨房纸吸去油份。铺在盘子上备用。
6、用大火把炒锅烧热,放入2汤匙油 趁油温还没热 立即放入腌好的牛肉粒,大火翻炒至看不见红色,取出一旁备用。
7、炒牛肉的锅里留一点油,把洋葱丁放入炒至透明,再放入灯笼椒丁和1/4茶匙盐 稍微翻炒一下,保持它的翠绿。再加入
李锦记黑椒酱1.5汤匙(1.5 tbsp Lee Kum Kee Black Pepper Sauce),炒匀后把牛肉粒放入一起翻炒至入味。出锅前撒一些黑胡椒粉。
8、把炒好的牛肉粒放在炸过的粉丝上面,用生菜包着吃,既浓郁又清爽。

Fry the vermicelli, prepare 1/2 cup or more oil and heat on high heat. when you can no longer see the oil moving it is hot enough to use, this is crucial or else the vermicelli will not fry thoroughly. you can test with a single strand of vermicelli, if they immediately puff up then the oil temperature is ready. fry the vermicelli's in batches until they are all puffed up and white in colour, strain them out and soak up any excess oil with some kitchen towel and set aside
Heat a stir fry pan on high and add in 2tablespoon of oil, while the oil is cold add in the marinated meat chunks and stir fry on high until it's no longer white and set aside
Use the remaining oil and stir fry the onions and then the bell peppers, season with 1/4 teaspoon of salt and add in 1.5 tablespoon of lee kum kee black pepper sauce, after the sauce is fully incorporated, sprinkle on some black pepper and set onto a plate. place the meat on the fried vermicelli and wrap with the lettuce when you are ready to eat!
